Pumpkin-shaped salted caramel chocolate truffles with pretzel stems

These pumpkin-shaped salted caramel chocolate truffles pair a soft dark-chocolate center with a thin orange shell and a tiny pretzel stem. Their shape is unmistakably seasonal, yet the technique stays approachable because no specialty mold is required.

A small amount of caramel and butter keeps the ganache smooth rather than sticky. After chilling, each center is rolled, coated, and marked with gentle ridges before the shell fully sets.

Why these pumpkin truffles work

Dark chocolate balances the sweet coating, while caramel and salt round out its bitterness. The centers are compact enough to roll cleanly after chilling. Oil thins the orange coating so it forms a neat shell instead of a heavy layer.

Ingredient notes

Use a thick salted caramel sauce rather than a thin ice-cream syrup. Orange candy coating is more dependable than tinted white chocolate because water-based coloring can seize chocolate. Thin pretzel sticks make edible stems with a useful salty crunch.

Create the pumpkin shape

Roll the chilled ganache into spheres and flatten each one only slightly. After dipping, draw five or six shallow vertical curves with a toothpick while the coating is still soft. Insert a short pretzel stem before the top sets.

Success tips

  • Chop the chocolate finely so the hot cream melts it evenly.
  • Chill the ganache until scoopable but not rock-hard.
  • Work with a few centers at a time and keep the rest cold.
  • Tap away excess coating for a thin, clean shell.

Substitutions and variations

Milk chocolate creates a sweeter center, while bittersweet chocolate makes a deeper one. Replace the pretzel stems with tiny pieces of chocolate wafer for a gluten-free version, checking every label carefully.

Storage and make-ahead

Store the truffles airtight in the refrigerator for up to one week. Let them stand at cool room temperature for 10 minutes before serving. Freeze uncoated ganache centers for up to one month and coat them after thawing overnight in the refrigerator.

Frequently asked questions

Can I use homemade caramel?

Yes, provided it is thick, completely cool, and smooth before it enters the ganache.

Why did the coating crack?

The centers may have been too cold. Let refrigerated centers rest for five minutes before dipping.

Description

Dark chocolate salted-caramel ganache coated and shaped into small orange pumpkins.

Ingredients

Scale
  • 8 oz (227 g) dark chocolate, finely chopped
  • 1/3 cup (80 ml) heavy cream
  • 3 tbsp (60 g) thick salted caramel sauce
  • 1 tbsp (14 g) unsalted butter, softened
  • 1/4 tsp (1 g) fine salt
  • 12 oz (340 g) orange candy coating wafers
  • 1 tbsp (14 g) refined coconut oil
  • 4 thin pretzel sticks (about 12 g), broken into 16 stems

Instructions

  1. Place the finely chopped dark chocolate in a heatproof bowl.
  2. Heat the cream just until steaming. Pour it over the chocolate, rest for 2 minutes, then stir from the center until smooth.
  3. Stir in the caramel, butter, and salt. Cover and chill for 2 hours, until scoopable.
  4. Scoop 16 equal portions and roll them quickly into spheres. Flatten each very slightly and chill for 20 minutes.
  5. Melt the orange coating with the coconut oil in short microwave bursts, stirring often.
  6. Dip one center at a time, tap off the excess, and set it on parchment. While the coating is soft, draw five or six shallow vertical ridges with a toothpick and insert a short pretzel stem.
  7. Let the coating set completely, then refrigerate the truffles in an airtight container.

Notes

Keep the ridges shallow so the coating stays intact. If it sets too quickly, decorate each truffle immediately after dipping.
