Salted caramel coffin brownie bites with black cocoa crumbs

Salted caramel coffin brownie bites turn a dense black-cocoa brownie into a small Halloween dessert with a soft caramel center. Their individual size makes them easy to arrange, transport, and serve without cutting a decorated slab at the party.

A silicone coffin mold creates the shape, while chocolate-cookie crumbs and one restrained ivory line add definition. The result feels spooky without requiring detailed piping or fondant.

Why these brownie bites work

Melted dark chocolate keeps the crumb fudgy, black cocoa deepens the color, and thick caramel remains in a distinct pocket. Baking in small cavities creates chewy edges around every brownie.

Ingredient notes

Use thick salted caramel rather than a thin sauce. Black cocoa supplies color but is mild, so regular cocoa provides most of the chocolate flavor. Finely crushed sandwich cookies resemble soil and adhere to the glossy tops.

Fill the coffin molds cleanly

Add a shallow layer of batter, place a small chilled caramel portion in the center, then cover it completely. Keep batter away from the top rim so the baked shapes release neatly.

Success tips

  • Grease every corner of the silicone mold lightly.
  • Chill the caramel portions before assembling.
  • Fill each cavity to the same depth.
  • Cool completely before releasing the brownies.

Substitutions and variations

Dulce de leche can replace salted caramel. For a nut-free party, verify all chocolate, caramel, and cookie labels. A thin orange coating line can replace ivory chocolate.

Storage and make-ahead

Store the decorated bites airtight for three days at room temperature or five days refrigerated. Freeze undecorated brownies for two months and add the crumb finish after thawing.

Frequently asked questions

Can I make these without a coffin mold?

Yes. Bake in a lined 8-inch pan and cut cooled brownies into narrow rectangles, trimming the top corners at an angle.

Why did the caramel leak?

The caramel may have touched the mold or been too fluid. Chill it and surround every portion completely with batter.

Description

Individual black-cocoa coffin brownies filled with salted caramel and finished with cookie crumbs.

Ingredients

Scale
  • 1/2 cup (113 g) unsalted butter
  • 4 oz (113 g) semisweet chocolate, chopped
  • 3/4 cup (150 g) granulated sugar
  • 2 large eggs (100 g without shells)
  • 1 tsp (5 ml) vanilla extract
  • 1/2 cup (63 g) all-purpose flour
  • 1/4 cup (22 g) unsweetened cocoa powder
  • 2 tbsp (12 g) black cocoa powder
  • 1/4 tsp (1.5 g) fine salt
  • 1/3 cup (105 g) thick salted caramel sauce, chilled
  • 4 chocolate sandwich cookies (about 45 g), finely crushed
  • 2 oz (57 g) white chocolate, melted

Instructions

  1. Heat the oven to 350°F (175°C). Lightly grease a 12-cavity silicone coffin mold and place it on a metal tray.
  2. Divide the cold caramel into 12 small portions and chill while making the batter.
  3. Melt the butter and semisweet chocolate together. Cool for 5 minutes, then whisk in the sugar, eggs, and vanilla.
  4. Fold in the flour, both cocoa powders, and salt just until combined.
  5. Half-fill each mold cavity with batter. Place one caramel portion in the center and cover completely with remaining batter.
  6. Bake for 15–19 minutes, until the tops are set and a tester inserted away from the caramel shows moist crumbs. Cool completely in the mold.
  7. Release the brownies, brush the tops lightly with a little melted white chocolate, and add fine cookie crumbs.
  8. Pipe one thin ivory line on each coffin top. Let set before serving.

Notes

If using a metal novelty pan, grease and flour it carefully and begin checking two minutes earlier.
