Black cocoa cookies with green pistachio slime centers

Black cocoa pistachio slime cookies pair an inky chocolate dough with a bright green pistachio cream center. Breaking one open reveals the soft filling, giving the cookies a dramatic Halloween effect without relying on elaborate surface decoration.

Freezing the filling before assembly keeps it centered as the cookie spreads. Dark chocolate chunks add texture and reinforce the cocoa flavor around the nutty interior.

Why these stuffed cookies work

Brown sugar keeps the cookie centers soft, black cocoa provides color, and a small amount of regular cocoa adds depth. Chilled dough surrounds the frozen pistachio portions and limits leaks.

Ingredient notes

Choose a thick pistachio cream rather than a thin sauce. A tiny amount of green gel color is optional but helps the center remain vivid after baking. Black cocoa is very dark but mild, so it is balanced with regular cocoa.

Seal the centers completely

Flatten one dough portion, place a frozen pistachio center in the middle, and bring the edges together. Roll gently until no filling is visible, then place the seam underneath.

Success tips

  • Freeze the filling portions until solid.
  • Chill the finished dough before shaping.
  • Weigh or divide the dough evenly.
  • Leave generous space between cookies on the tray.

Substitutions and variations

Hazelnut cream can replace pistachio cream, although the green center will be lost. White chocolate chunks provide stronger contrast. Omit the color for a naturally muted pistachio filling.

Storage and make-ahead

Store baked cookies airtight for four days. Rewarm individual cookies for five seconds to soften the center. Freeze filled dough balls for one month and bake from frozen, adding two minutes.

Frequently asked questions

Why did the filling escape?

The dough seam may have been thin or open. Use enough dough to enclose every frozen portion and smooth all cracks.

Can I skip black cocoa?

Yes. Replace it with regular unsweetened cocoa; the cookies will be brown rather than nearly black.

Description

Soft black-cocoa chocolate cookies stuffed with vivid pistachio cream centers.

Ingredients

Scale
  • 2/3 cup (160 g) thick pistachio cream
  • 1/8 tsp (0.6 ml) green gel food color, optional
  • 2 cups (250 g) all-purpose flour
  • 1/4 cup (22 g) unsweetened cocoa powder
  • 3 tbsp (18 g) black cocoa powder
  • 1 tsp (4 g) baking soda
  • 1/2 tsp (3 g) fine salt
  • 3/4 cup (170 g) unsalted butter, softened
  • 3/4 cup (150 g) packed dark brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1 large egg (50 g without shell)
  • 1 tsp (5 ml) vanilla extract
  • 4 oz (113 g) dark chocolate chunks

Instructions

  1. Stir the pistachio cream with green gel color if using. Portion 16 teaspoons onto parchment and freeze until solid, about 40 minutes.
  2. Whisk the flour, both cocoa powders, baking soda, and salt.
  3. Beat the butter with both sugars until creamy. Beat in the egg and vanilla.
  4. Mix in the dry ingredients just until combined, then fold in the dark chocolate chunks. Chill the dough for 30 minutes.
  5. Heat the oven to 350°F (175°C) and line two trays with parchment.
  6. Divide the dough into 16 portions. Flatten each one, enclose a frozen pistachio center, and seal completely. Place seam-side down with space between cookies.
  7. Bake for 10–13 minutes, until the edges are set and the centers remain soft. Cool on the tray for 10 minutes before moving.

Notes

Keep unused pistachio portions frozen while shaping so every center remains firm and easy to seal.
