Apple butter ghost cookies bring concentrated apple flavor, cinnamon, and a soft cakey center to a simple Halloween design. An irregular ivory glaze flows toward one edge like a ghost tail, while two tiny chocolate dots create the face.
The decoration is intentionally loose, so every cookie can look different. No cutter or detailed royal icing is required.
Why apple butter works in cookies
Apple butter provides fruit flavor with less moisture than applesauce. Brown butter adds a toasted note, while a short chill keeps the cookies thick and tender.
Ingredient notes
Choose smooth unsweetened or lightly sweetened apple butter. If it is very loose, cook it briefly to thicken. Jimmies are optional; the glaze and chocolate eyes provide enough contrast.

Create easy ghost shapes
Spoon glaze over the upper two-thirds of each cooled cookie and pull a small amount toward the lower edge. Once the glaze begins to set, add two small dark-chocolate eyes.
Success tips
- Cool the browned butter until opaque but still soft.
- Use thick apple butter for consistent dough.
- Chill the dough before scooping.
- Glaze only fully cooled cookies.

Substitutions and variations
Pumpkin butter can replace apple butter if it has a similar consistency. Maple extract can replace part of the vanilla. Add chopped pecans only when allergies are not a concern.
Storage and make-ahead
Store glazed cookies airtight for four days with parchment between layers. Freeze unglazed cookies for two months and decorate after thawing.
Frequently asked questions
Why did my cookies spread?
The butter or dough may have been too warm. Chill the portioned dough for 15 minutes before baking.
Can I use applesauce?
Not directly. Applesauce contains more water and would require recipe adjustments.
