Description

Classic snickerdoodle-style cookies upgraded with reduced apple cider for concentrated caramel-apple-spice aroma and a slightly more spice-forward cinnamon-sugar coating.


Ingredients

  • Unfiltered apple cider (for reduction): 1 cup (240 ml)
  • Unsalted butter, softened: 1/2 cup (113 g)
  • Granulated sugar: 1/2 cup (100 g)
  • Light brown sugar, packed: 1/4 cup (50 g)
  • Egg: 1 large
  • Vanilla extract: 1 tsp (5 ml)
  • Ground cinnamon: 1 tbsp (8 g)
  • Ground nutmeg: 1/4 tsp (0.5 g)
  • Ground ginger: 1/8 tsp (0.3 g)
  • Cream of tartar: 1 1/2 tsp (6 g)
  • Baking soda: 1/4 tsp (1 g)
  • Fine salt: 1/4 tsp (1.5 g)
  • All-purpose flour: 1 1/2 cups (190 g)
  • Granulated sugar (for coating): 1/2 cup (100 g)
  • Ground cinnamon (for coating): 2 tsp (4 g)
  • Ground nutmeg (for coating): 1/8 tsp (0.3 g)
  • Ground ginger (for coating): 1/8 tsp (0.3 g)


Instructions

  1. Reduce the apple cider: Pour 1 cup (240 ml) apple cider into a small saucepan. Simmer over medium-low until reduced to about 1/3 cup (80 ml) and syrupy, 20–30 minutes, stirring occasionally.
  2. Cool completely: Transfer reduced cider to a bowl. Let it cool to room temperature (about 20–30 minutes).
  3. Make the dough: In a medium bowl, whisk flour, cream of tartar, baking soda, salt, and 1 tablespoon (8 g) cinnamon, nutmeg, and ginger. Set aside.
  4. Cream butter + sugars: In a large bowl, beat butter, granulated sugar, and brown sugar until smooth and fluffy, 2–3 minutes.
  5. Add wet ingredients: Beat in the egg, then beat in vanilla. Scrape bowl.
  6. Add reduced cider: Mix in the cooled reduced cider until the dough looks cohesive.
  7. Combine dry + wet: Add dry ingredients to wet and mix just until no flour streaks remain. The dough will be thick.
  8. Chill: Cover and refrigerate 20–30 minutes so dough firms up for easy rolling.
  9. Heat the oven: Preheat oven to 350°F (175°C). Line 2 baking sheets with parchment.
  10. Mix coating: In a small bowl, stir together granulated sugar, cinnamon, nutmeg, and ginger.
  11. Form balls: Scoop about 1 1/2 tbsp (25–30 g) dough per cookie and roll into balls.
  12. Coat generously: Roll each ball in cinnamon-sugar, pressing lightly so coating adheres. Place on baking sheets about 2 inches (5 cm) apart.
  13. Bake: Bake 10–12 minutes, until edges are set and lightly golden and the centers look dry with no wet gloss.
  14. Cool on the tray: Let cookies cool on the baking sheet 5 minutes, then transfer to a wire rack to cool completely.

Notes

– Reduced cider troubleshooting: If your reduction looks very thin after 20 minutes, keep simmering in 5-minute increments until it lightly coats a spoon.
– Texture note: For softer cookies, pull them when centers are just set. For a more crisp edge, bake 1–2 minutes longer.
– Spice control: Feel free to adjust nutmeg/ginger to your preference; the coating should feel warm, not sharp.
