Description

Chewy oatmeal cookies with nutty brown butter, tart apple flavor, and a thin real-maple glaze—designed for moisture-control using reduced unsweetened applesauce plus small dried apple pieces.

Ingredients

  • Unsalted butter: 1/2 cup (113 g)
  • Unsweetened applesauce: 1 cup (240 g) (to reduce to about 1/2 cup / 120 g thick applesauce)
  • Light brown sugar: 1/2 cup (packed) (100 g)
  • Granulated sugar: 1/4 cup (50 g)
  • Large egg: 1 (about 50–60 g, without shell)
  • Vanilla extract: 2 tsp (10 ml)
  • Old-fashioned rolled oats: 1 1/2 cups (135 g)
  • All-purpose flour: 3/4 cup (90 g), spooned and leveled
  • Ground cinnamon: 1 tsp (2 g)
  • Baking soda: 1/2 tsp (2 g)
  • Fine salt: 1/4 tsp (1 g)
  • Small dried apple pieces: 1/2 cup (45 g), chopped if very large
  • Optional extra apple warmth: 1/4 tsp (0.5 g) ground nutmeg (optional)
  • Maple glaze:
    • Pure maple syrup: 1/4 cup (60 ml)
    • Powdered sugar: 1/2 cup (60 g)
    • Milk (dairy or unsweetened non-dairy): 1–2 tbsp (15–30 ml) to thin
    • Pinch of salt: 1/16–1/8 tsp (0.3 g) (optional, boosts flavor)

Instructions

  1. Reduce the applesauce: In a small saucepan over medium heat, simmer 1 cup (240 g) unsweetened applesauce, stirring often, until thickened to about 1/2 cup (120 g). This usually takes 10–18 minutes. Let cool until warm or room temperature.
  2. Brown the butter: In a skillet over medium heat, melt 1/2 cup (113 g) butter. Continue cooking, swirling occasionally, until it turns deep golden and smells nutty, about 5–8 minutes. Immediately pour into a bowl (to stop the cooking) and cool 5–10 minutes.
  3. Mix wet ingredients: Whisk brown sugar and granulated sugar into the browned butter. Whisk in the egg, then vanilla. Stir in the reduced applesauce until smooth.
  4. Mix dry ingredients: In a separate bowl, combine oats, flour, cinnamon, baking soda, salt, and optional nutmeg.
  5. Combine: Add dry ingredients to wet ingredients and stir until no dry flour remains. Fold in small dried apple pieces.
  6. Chill (recommended for spread control): Cover and refrigerate dough for 30–60 minutes. (If your kitchen is warm, lean toward 60 minutes.)
  7. Preheat: Heat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  8. Scoop: Scoop 2 tbsp portions (about 30 g each) and place 2 inches (5 cm) apart.
  9. Bake: Bake 10–13 minutes, until edges are set and lightly browned and centers look slightly underdone.
  10. Cool: Cool on the tray 10 minutes, then transfer to a rack and cool completely before glazing.
  11. Make maple glaze: Whisk maple syrup and powdered sugar until smooth. Add milk 1 tsp (5 ml) at a time until the glaze is thin and drizzly (it should ribbon slightly but not be watery).
  12. Glaze: Drizzle glaze over fully cooled cookies. Let set 10–15 minutes before stacking or serving.

Notes

Dough consistency check: after mixing, the dough should be thick and scoopable. If it feels very loose, refrigerate longer. Glaze timing matters: always glaze after full cooling for a set drizzle rather than sinking.
