Description

Soft, slightly chewy chai-spiced sugar cookies baked as thumbprints and filled with a dark chocolate + chai ganache-style “chai-mud.” Finished with a light chai sugar dust for a café-at-home look.

  • 1/2 cup (113 g) unsalted butter
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (50 g) packed light brown sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 3/4 cups (219 g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp kosher salt
  • 2 tsp chai spice blend (or 1 1/2 tsp cinnamon, 1/2 tsp ginger, 1/2 tsp cardamom-style)
  • 1/2 tsp ground cinnamon (optional for extra chai aroma)
  • 2 Tbsp granulated sugar (for shaping and dusting)
  • 1/2 tsp chai spice blend (for shaping and dusting)
  • 6 oz (170 g) dark chocolate, chopped (semi-sweet or 60–70% is ideal)
  • 1/2 cup (120 ml) heavy cream
  • 1 Tbsp unsalted butter
  • 1 tsp chai spice blend
  • Pinch of salt


Instructions

  1. Brown the butter: In a small saucepan over medium heat, melt the butter. Continue cooking until it turns golden and smells nutty, swirling occasionally. Immediately pour into a bowl to stop cooking. Cool until warm but not solid (about 15–20 minutes). It should feel fluid when stirred.
  2. Make the dough: Whisk granulated sugar and brown sugar into the cooled browned butter. Whisk in egg yolk and vanilla until smooth.
  3. Add dry ingredients: In a separate bowl, whisk flour, baking powder, salt, and chai spices (and optional cinnamon). Stir dry into wet until no dry streaks remain. The dough will be thick.
  4. Chill: Cover and refrigerate 30–60 minutes to firm the dough for easy shaping.
  5. Heat oven: Preheat to 350°F (175°C). Line two baking sheets with parchment.
  6. Shape: Scoop about 1 Tbsp dough per cookie (around 18–22 cookies). Roll into balls and space 2 inches (5 cm) apart.
  7. First bake: Bake 10–12 minutes, until edges are set and lightly golden and the centers look slightly underdone.
  8. Re-press thumbprints: Remove from oven. Press a thumb (or a small 1/2-in / 12-mm measuring spoon) into the warm center of each cookie to form a well. If the dough sticks, lightly re-warm your thumb/spoon with a quick wash of hot water and dry.
  9. Cool: Let cookies cool on the sheet for 5 minutes, then transfer to a rack to cool completely.
  10. Make the chai-mud filling: Place chopped dark chocolate in a heatproof bowl. In the same small saucepan (or microwave), heat heavy cream until steaming. Pour over chocolate, add butter, chai spice, and pinch of salt. Let sit 1 minute, then stir until glossy and smooth.
  11. Thicken to fill: Cool the ganache until spoonable and thick enough to mound slightly (about 15–25 minutes). Stir occasionally.
  12. Fill: Spoon about 1–1 1/2 tsp filling into each cooled thumbprint. Use the back of the spoon to level.
  13. Chai sugar finish: Mix granulated sugar and chai spice blend. Lightly dust over the filled cookies.
  14. Set: Let cookies stand until filling is set, about 20–30 minutes. Serve or store.

Notes

– If your chai spice blend is strong or very sweet, taste-adjust by reducing to 1 1/2 tsp in the dough.
– For extra defined wells, re-press as soon as the cookies come out—don’t wait for them to cool on the sheet.
– This recipe uses egg yolk for tenderness; don’t substitute whole egg unless you’re comfortable with a slightly softer, more spread-prone dough.
