Caramel apple cupcakes topped with edible pretzel witch brooms

Caramel apple witch’s broom cupcakes pair a soft cinnamon-apple cake with silky salted caramel frosting and a crisp edible broom topper. The design feels unmistakably Halloween while using familiar fall flavors that remain appealing throughout October.

The broomsticks are assembled from thin pretzel sticks and small pieces of shredded wheat cereal tied with a narrow chocolate band. They can be made ahead and placed on the cupcakes just before serving.

Why these apple cupcakes work

Finely diced apple softens into the crumb without creating wet pockets. Oil keeps the cupcakes tender, and a modest swirl of caramel buttercream supports the light broom decoration without overwhelming the cake.

Ingredient notes

Choose a firm tart-sweet apple such as Honeycrisp or Granny Smith. Thick caramel sauce gives the frosting flavor without making it loose. Miniature shredded wheat rectangles separate naturally into broom-like strands.

Make the edible broomsticks

Cut each cereal piece into a small bundle, insert one pretzel stick, and dip the join in melted chocolate. A few extra chocolate lines around the join create the look of twine. Let every broom set flat before using it as a topper.

Success tips

  • Dice the apple no larger than a quarter inch.
  • Drain visibly juicy apple pieces before folding them into batter.
  • Cool the cupcakes completely before frosting.
  • Add broom toppers shortly before serving so they stay crisp.

Substitutions and variations

Pear works in place of apple, and dulce de leche can replace thick caramel. For a nut-free party, check the caramel, cereal, pretzel, and chocolate labels carefully.

Storage and make-ahead

Store unfrosted cupcakes airtight for one day or freeze for one month. Refrigerate frosted cupcakes for up to three days and bring them to cool room temperature before serving. Keep the broom toppers separately at room temperature.

Frequently asked questions

Can I use applesauce instead of diced apple?

Not as a direct swap. Applesauce changes the liquid balance and will not provide the same caramel-apple texture.

Why is my frosting soft?

The caramel may have been warm or thin. Chill the bowl for 10 minutes, then beat again.

Description

Cinnamon-apple cupcakes with salted caramel frosting and edible pretzel broom toppers.

Ingredients

Scale
  • 1 1/2 cups (188 g) all-purpose flour
  • 1 tsp (4 g) baking powder
  • 1/2 tsp (2 g) baking soda
  • 1 tsp (2 g) ground cinnamon
  • 1/2 tsp (3 g) fine salt
  • 2 large eggs (100 g without shells)
  • 3/4 cup (150 g) packed light brown sugar
  • 1/2 cup (120 ml) neutral oil
  • 1/2 cup (120 ml) buttermilk
  • 2 tsp (10 ml) vanilla extract
  • 1 cup (120 g) peeled apple, finely diced
  • 1 cup (227 g) unsalted butter, softened
  • 3 cups (360 g) powdered sugar
  • 1/3 cup (100 g) thick salted caramel sauce, divided
  • 1 tbsp (15 ml) heavy cream
  • 12 thin pretzel sticks (about 24 g)
  • 6 miniature shredded-wheat cereal pieces (about 30 g), halved
  • 2 oz (57 g) dark chocolate, melted

Instructions

  1. Heat the oven to 350°F (175°C). Line a 12-cavity muffin pan with brown paper liners.
  2. Whisk the flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk the eggs, brown sugar, oil, buttermilk, and vanilla. Fold in the dry ingredients, then the diced apple.
  4. Divide among the liners and bake for 18–21 minutes, until the tops spring back. Cool completely.
  5. Beat the butter until creamy. Gradually beat in powdered sugar, 1/4 cup (75 g) caramel, and cream. Pipe one modest swirl on each cupcake and drizzle with the remaining caramel.
  6. For each broom, insert a pretzel stick into a halved cereal piece. Dip the join in melted chocolate and pipe two narrow chocolate bands around it. Let set completely.
  7. Place one broom on each cupcake shortly before serving.

Notes

Keep the broom toppers in a dry airtight container and add them after refrigeration.
