I love a dessert that tastes fancy but behaves predictably, and cardamom chocolate pots de crème do exactly that. The custards bake gently, then chill until spoon-soft—so you get clean slices of texture even when you’re serving a crowd.

For fall-at-heart flavor, I infuse the cream with green cardamom and then finish each pot with a fast brown-butter + maple drizzle. It’s warm, nutty, and lightly sweet—without needing any fruit theme.

What makes these pots de crème silky

Pots de crème are baked custards with chocolate melted into a warm dairy base, then thickened with egg yolks. The key is low heat and a careful bake: the custards should be set at the edges but still tremble slightly in the center when you gently jiggle the ramekins.

  • Doneness visual cue: edges look set and glossy; the center should wobble like soft set gelatin—not liquid.
  • Texture goal: spoonable and smooth after chilling (they continue to set as they cool).

Method overview (quick map)

  • Warm dairy with green cardamom to perfume it.
  • Whisk in chocolate until smooth, then stir in yolks (tempering helps prevent scrambling).
  • Pour into ramekins and bake in a water bath until just set.
  • Chill, then drizzle with brown butter + maple.

Ingredient guidance (so the flavor lands)

  • Green cardamom: use freshly ground if possible, or a good-quality ground cardamom. Start with 1 teaspoon; it should taste fragrant, not soapy.
  • Chocolate: I recommend semi-sweet or dark chocolate chips or chopped bars. Chocolate that’s too bitter can overpower the cardamom.
  • Egg yolks: they’re your custard thickener. Whisk until they look slightly lighter and smoother.
  • Brown-butter maple drizzle: brown butter adds toastiness; maple syrup adds cozy sweetness. A small splash of cream helps it drizzle instead of seize.

Troubleshooting (common pot de crème moments)

If the custard looks grainy

  • Likely cause: chocolate seized or egg yolks scrambled from overheating.
  • Fix next time: melt chocolate off-heat with warm (not boiling) dairy and temper the yolks slowly.
  • In the moment: strain the mixture through a fine-mesh sieve before filling ramekins.

If the center is still loose after baking

  • Likely cause: water bath temperature too cool or under-baked time.
  • Fix: bake 3–5 minutes more and re-check the jiggle cue (set edges, soft wobble center).

If it’s set but not very “spoonable”

  • Likely cause: over-baking.
  • Fix next time: pull as soon as the wobble matches the visual cue. Chill time helps the texture settle, so you may not need extra bake.

Substitutions

  • Cardamom intensity: want it milder? Use 3/4 teaspoon ground cardamom. Want it stronger? Increase by 1/4 teaspoon.
  • Chocolate: substitute milk chocolate for a sweeter, softer profile.
  • Dairy swap: you can use all cream for richer results, or all milk for slightly lighter texture (still bake to the jiggle cue).
  • Maple drizzle: swap maple syrup with honey for a floral note, or use a mix of maple + a pinch of salt to keep it balanced.

Storage & make-ahead

  • Make ahead: bake up to 2 days in advance; cover and chill.
  • Best serving: drizzle right before serving for the prettiest sheen.
  • Storage: refrigerate covered for up to 3 days. The custards hold their flavor well as they chill.

FAQ

Can I freeze pots de crème?

I don’t recommend freezing. Custards like these can become slightly watery or grainy after thawing, even if they look fine at first.

Do I need a water bath?

Yes. A water bath helps the custards bake gently and evenly, protecting the eggs from turning firm or curdled.

What ramekin size should I use?

Use small ramekins for true “pot” portions. If you choose larger ones, start checking a few minutes earlier and bake to the jiggle cue.

Can I skip the cardamom infusion step?

You can, but infusion is what makes the flavor rounded. Warm the dairy with cardamom briefly so the spice disperses instead of tasting sharp.

Description

Silky baked chocolate custards infused with green cardamom, served chilled and finished with a glossy brown-butter maple drizzle.

Ingredients

  • Heavy cream: 2 cups (480 ml)
  • Whole milk: 1/2 cup (120 ml)
  • Ground green cardamom: 1 tsp (about 2 g)
  • Granulated sugar: 1/4 cup (50 g)
  • Semi-sweet chocolate (chips or chopped): 6 oz (170 g)
  • Egg yolks: 4 large
  • Vanilla extract: 1 tsp (5 ml)
  • Fine salt: a pinch (about 1/8 tsp)
  • Brown-butter maple drizzle:
    • Unsalted butter: 4 tbsp (57 g)
    • Maple syrup: 2 tbsp (30 ml)
    • Heavy cream (or whole milk): 1 tsp to 1 tbsp (5 to 15 ml), as needed for drizzling
    • Flaky sea salt (optional): 1 small pinch

Instructions

  1. Heat the oven and water bath: Heat oven to 325°F (160°C). Place 4 (4–6 oz / 120–180 ml) ramekins in a deep baking dish. Pour enough hot water into the baking dish to come halfway up the sides of the ramekins (careful not to splash into the ramekins). Set aside.
  2. Infuse the dairy: In a medium saucepan over medium-low heat, combine heavy cream and milk. Stir in ground green cardamom and sugar. Heat until steaming and fragrant but not boiling (small bubbles at the edges are okay), about 3–5 minutes.
  3. Melt chocolate: Remove the saucepan from heat. Add chopped/semi-sweet chocolate and whisk until fully smooth and glossy. Stir in salt and vanilla.
  4. Temper the yolks: In a bowl, whisk egg yolks. While whisking, slowly pour a small stream of the warm chocolate mixture into the yolks (start with 1–2 tablespoons, then add more). This raises yolk temperature without scrambling.
  5. Combine: Pour the tempered yolk mixture back into the saucepan. Whisk gently until smooth.
  6. Fill ramekins: Carefully remove the ramekins from the baking dish (or work in place with care) and pour custard into each ramekin. Return to the water bath.
  7. Bake: Bake at 325°F (160°C) for 18–24 minutes, until edges look set and the centers wobble like soft set pudding when you gently shake the dish (not liquid slosh).
  8. Cool: Remove ramekins from the water bath. Cool at room temperature for 30 minutes, then cover and refrigerate at least 3 hours (overnight is best) to fully set.
  9. Make the brown-butter maple drizzle: In a small saucepan over medium heat, melt butter. Continue cooking until it smells nutty and turns amber-brown, watching closely (about 2–4 minutes). Remove from heat; whisk in maple syrup. If it’s too thick to drizzle, whisk in 1 tsp to 1 tbsp (5–15 ml) cream until pourable.
  10. Serve: Uncover chilled pots. Drizzle each with brown-butter maple mixture. If using, add a tiny pinch of flaky salt on top. Serve cold.

Notes

Ramekin size matters: if yours are larger than 6 oz (180 ml), start checking 3–5 minutes earlier.

Cardamom strength: if you’re sensitive to spices, start with 3/4 tsp cardamom and bump up only if you want more aroma.

For extra-smooth custard, strain the chocolate mixture through a fine-mesh sieve after tempering.
