Dark chocolate tartlets with miso caramel and ganache

Dark chocolate miso caramel tartlets layer crisp cocoa pastry, silky caramel, and glossy ganache in a compact dessert. White miso adds savory depth and saltiness without making the filling taste overtly savory. The result is a modern version of a familiar chocolate-caramel tart.

Individual tartlets are especially useful for entertaining because they portion cleanly, chill quickly, and display the filling layers at every cut edge. Each component can also be prepared in stages.

What miso contributes to caramel

White miso is mild, slightly sweet, and less assertive than red miso. Its fermented character deepens the caramel and balances the sugar in much the same way salt does, but with greater complexity.

Add miso after the hot cream has been incorporated. Whisk until perfectly smooth, then taste only after the filling cools slightly because heat can mute both salt and sweetness.

Building three clean textures

The cocoa shell should be crisp, the caramel soft but sliceable, and the ganache smooth. Blind-baking the shells protects their structure, while chilling the caramel before adding ganache preserves a distinct amber layer.

Use a thin ganache cap rather than filling the entire shell with chocolate. That balance keeps the dessert rich but not overwhelming.

Cocoa pastry success

Mix the dough only until it forms large moist crumbs. Press it into six removable-bottom tartlet pans in an even layer, paying particular attention to the corners. Chill before baking so the sides do not slump.

Dock the bases and use small parchment circles with baking weights. Remove the weights for the final few minutes so the centers become dry and crisp.

Caramel without crystallization

Use a clean heavy saucepan and avoid stirring once the sugar begins to boil. Swirl the pan gently if one area colors more quickly. Warm cream reduces splattering and helps the caramel combine smoothly.

If a few hard sugar pieces form, return the pan to low heat and whisk gently until they dissolve. Let the caramel cool briefly before dividing it among the shells.

Glossy chocolate ganache

Finely chopped chocolate melts more evenly than large pieces. Pour hot cream over it, wait two minutes, then stir from the center outward. Stop once the mixture is glossy to avoid incorporating bubbles.

Troubleshooting

Why did the shells shrink?

The dough was probably warm or stretched during shaping. Press it into place without pulling and chill the lined pans thoroughly.

Why is the caramel runny?

It may not have reached a sufficient temperature or may have been measured with too much cream. Chill it fully before judging the texture.

Why did the ganache split?

The cream may have been boiling or the mixture overworked. Stir gently and add one teaspoon of warm cream if needed.

Variations and finishing ideas

Finish with sesame seeds for a subtle nutty note, or use toasted hazelnuts if preferred. Espresso powder can be added to the ganache, while orange zest provides a brighter direction. Keep garnishes restrained so the glossy surface remains visible.

Make-ahead and storage

Bake the shells two days ahead and keep them airtight. The caramel can be prepared three days ahead and rewarmed gently until spoonable. Finished tartlets keep refrigerated for four days. Bring them toward cool room temperature for 20 minutes before serving.

Frequently asked questions

Does the dessert taste strongly of miso?

No. White miso creates a subtle salty, fermented depth while chocolate and caramel remain dominant.

Can I make one large tart?

Yes. Use a 9-inch tart pan and extend the shell bake and chilling times as needed.

Description

Individual cocoa tartlets with white-miso caramel and a glossy dark chocolate ganache cap.

Ingredients

Scale
  • 1 1/4 cups (156 g) all-purpose flour
  • 1/3 cup (28 g) unsweetened cocoa powder
  • 1/2 cup (60 g) powdered sugar
  • 1/4 tsp (1.5 g) fine salt
  • 1/2 cup (113 g) cold unsalted butter, cubed
  • 1 large egg yolk (18 g)
  • 2 tbsp (30 ml) cold whole milk
  • 3/4 cup (150 g) granulated sugar
  • 3 tbsp (42 g) unsalted butter, for caramel
  • 1/2 cup (120 ml) heavy cream, warm, for caramel
  • 2 tbsp (36 g) white miso
  • 1 tsp (5 ml) vanilla extract
  • 6 oz (170 g) dark chocolate, finely chopped
  • 2/3 cup (160 ml) heavy cream, for ganache
  • 1 tsp (5 g) black and white sesame seeds, optional

Instructions

  1. Pulse the flour, cocoa, powdered sugar, and salt with the cold butter until crumbly. Add the yolk and milk and mix just until the dough holds together.
  2. Press the dough evenly into six 4-inch (10 cm) removable-bottom tartlet pans. Chill for 30 minutes.
  3. Heat the oven to 350°F (175°C). Line the shells with parchment and weights. Bake for 14 minutes, remove the weights, and bake 5–7 minutes more. Cool.
  4. Cook the granulated sugar in a heavy saucepan until deep amber. Carefully whisk in 3 tbsp (42 g) butter and the warm 1/2 cup (120 ml) cream.
  5. Remove from the heat and whisk in the white miso and vanilla. Cool for 10 minutes, divide among the shells, and chill for 30 minutes.
  6. Pour the hot 2/3 cup (160 ml) cream over the chopped chocolate. Rest for 2 minutes, then stir until glossy.
  7. Spread a thin ganache layer over each caramel-filled shell. Chill for at least 1 hour.
  8. Finish with sesame seeds if desired and let stand for 20 minutes before serving.

Notes

Use mild white miso and chill the caramel layer before adding ganache to preserve clean, distinct layers.
