Description
Fudgy brown-butter brownies finished with a dirty chai–spiced caramel swirl and a toasted chai crumb topping. Cozy, spiced, and coffee-kissed without turning cakey.
Ingredients
- Unsalted butter, for browning: 10 Tbsp (142 g), plus 1 tsp extra if needed for greasing the foil/pan lining
- Semisweet chocolate (chips or chopped): 8 oz (226 g)
- Granulated sugar: 3/4 cup (150 g)
- Light brown sugar: 1/4 cup (50 g)
- Large eggs: 2 (about 100 g each without shells)
- Vanilla extract: 2 tsp (10 ml)
- All-purpose flour: 1/2 cup (60 g)
- Unsweetened cocoa powder: 1/4 cup (22 g)
- Fine salt: 1/2 tsp (2.5 g)
- Chai spice blend: 1 1/2 tsp (3 g), plus more for dusting if you like
- Instant espresso powder: 1/2 tsp (about 1 g)
- Salted caramel sauce: 1/2 cup (160 g)
- Milk (or cream), for thinning caramel swirl if needed: 1–2 Tbsp (15–30 ml)
- Optional: flaky sea salt for finishing: pinch
- Chai crumb topping:
- All-purpose flour: 2 Tbsp (15 g)
- Brown sugar: 2 Tbsp (25 g)
- Chai spice blend: 1 tsp (2 g)
- Unsweetened cocoa powder: 1 Tbsp (8 g)
- Fine salt: 1/8 tsp (0.6 g)
- Unsalted butter, melted: 1 1/2 Tbsp (21 g)
Instructions
- Heat oven + prep pan. Preheat to 350°F (175°C). Line a 9×9-inch (23×23 cm) pan with foil, leaving overhang for lifting, and lightly grease the foil.
- Brown the butter. In a medium saucepan, melt the butter over medium heat. Keep cooking, swirling, until it smells nutty and the milk solids turn golden brown (usually 3–6 minutes). Immediately remove from heat.
- Melt chocolate. Add the chopped chocolate to the hot brown butter. Let sit 30 seconds, then whisk until smooth and glossy.
- Whisk sugars into chocolate. Whisk in granulated sugar and brown sugar until the mixture looks thick and shiny.
- Add eggs and flavor. Whisk in eggs one at a time, then whisk in vanilla.
- Dry ingredients. Sprinkle in flour, cocoa powder, salt, 1 1/2 tsp chai spice, and espresso powder. Fold or whisk just until the batter is smooth—don’t overmix.
- Make the chai caramel swirl. In a small bowl, stir salted caramel sauce with 1/2 tsp chai spice (or up to 1 tsp, to taste). If it’s too thick to spoon, stir in 1 Tbsp (15 ml) milk; add only if needed.
- Make chai crumb topping. In a small bowl, mix flour, brown sugar, chai spice, cocoa powder, and salt. Stir in melted butter until it forms small clumps/crumbs.
- Toast crumb. Spread crumb onto a small baking sheet (or keep it in the bowl if you’ll toast in a skillet). Toast 6–8 minutes at 350°F (175°C) until fragrant and slightly darker. Cool 5 minutes.
- Assemble. Pour brownie batter into the lined pan and smooth the top. Drop small spoonfuls of chai caramel over the batter. Swirl gently with a knife or skewer using 6–10 light passes—stop before fully mixing.
- Add topping. Sprinkle the toasted chai crumb over the swirled surface. Press very lightly so the crumbs adhere.
- Bake. Bake 22–28 minutes. Start checking at 20 minutes. Look for set edges and a center that is still soft; a toothpick should return with moist fudgy crumbs, not wet batter.
- Cool for clean slices. Cool in the pan at least 1 hour (or until firm). Lift out and cut into squares.
Notes
Visual doneness matters most: when the top looks mostly matte with faint crackles and the center jiggles only slightly, you’re in the fudgy zone. If your swirl seems runny before baking, chill 5–10 minutes so it thickens enough to sit on top.
