Neutral oil (only if using chocolate, optional for fluidity): 1/2 tsp (2.5 mL)
Acetate sheet or parchment paper: 1 sheet, plus a printed raven template
Optional: extra candy melts/chocolate for repairing thin spots - Optional tools/materials:
Nonstick cooking spray (or butter + flour for pans)
Parchment circles cut for 8-inch pans
Cake leveler or serrated knife
Bench scraper/offset spatula
Acetate strip for a clean silhouette edge (recommended)
Instructions
- Prep pans and preheat. Heat oven to 350°F (175°C). Spray three 8-inch round cake pans with nonstick spray, line with parchment circles, then spray the parchment. Lightly dust with flour.
- Make the cake batter. In a bowl, whisk flour, baking powder, baking soda, and salt. In a stand mixer fitted with a paddle, beat butter and sugar on medium until fluffy (about 2 minutes). Beat in eggs one at a time, then mix in vanilla. With the mixer on low, alternate adding dry ingredients and milk in 3 additions each, starting and ending with dry. Stir in blackberry puree and vinegar (batter will look thick and glossy).
- Bake the layers. Divide batter evenly among pans. Bake 22–28 minutes, until a toothpick near the center comes out with a few moist crumbs and the tops spring back when lightly pressed. Cool in pans 10 minutes, then turn out onto racks to cool completely (1–2 hours).
- Trim and level. If domes formed, level each layer with a long serrated knife or cake leveler. Set the trimmings aside for later crumbs or tasting.
- Cook the blackberry-vanilla compote. In a small saucepan, whisk preserves/jam with water/juice, lemon juice, cornstarch, and vanilla until smooth. Cook on medium, stirring constantly, until thick and glossy and it coats the back of a spoon (about 3–6 minutes). Transfer to a bowl, cover surface directly with plastic wrap, and cool until spreadable and room temp (about 30–45 minutes).
- Make the black cocoa buttercream. Beat butter on medium until smooth (about 1–2 minutes). Add powdered sugar, black cocoa, and salt. Mix on low until incorporated, then beat on medium-high for 2–3 minutes. Add vanilla. Slowly stream in 4 tbsp (60 mL) cream, then beat 30–60 seconds. Aim for a thick but spreadable consistency—add 1–2 tbsp (15–30 mL) more cream only if needed.
- Assemble and crumb-coat. Place one cake layer on a serving plate or cake board. Spread about 1/3 of the compote over the layer (leave a 1/2-inch / 1.3 cm border). Pipe or spoon a thin layer of buttercream on top to help seal. Repeat with the second layer, then stack the third. Use remaining buttercream to create a crumb coat: a thin, even layer over sides and top. Chill 15–25 minutes until firm.
- Final frost. Add a second, thicker layer of buttercream. Smooth sides with a bench scraper and gently level the top. Chill 20–30 minutes to set the frosting.
- Create the raven silhouette. Print (or draw) a simple raven silhouette and place it under an acetate sheet taped to a flat surface. Melt black candy melts (microwave in short bursts, stirring often) or temper chocolate by gently melting until fluid; if using chocolate and it’s too thick, stir in the optional oil for smooth flow. For a sharp silhouette: use a piping bag with a tiny opening (or a small spoon) to outline the raven edges, then fill in the body in an even layer. Tap the acetate lightly to release air bubbles. Let set until fully opaque and firm (typically 20–40 minutes).
- Remove and attach. Carefully peel the silhouette off the acetate. If any areas are too soft, place it back on acetate for 5–10 minutes to firm up. Attach it to the center or upper section of the chilled cake with small dabs of buttercream (or a swipe of melted chocolate) on the back. Chill 10 minutes to set.
- Serve. For best flavor and texture, let the cake sit at cool room temperature 20–30 minutes before slicing.
Notes
If your compote is too runny, cook it 1–2 minutes longer—cornstarch thickens as it simmers. If your buttercream tastes intensely “cocoa-dry,” add a little more cream (1 tbsp / 15 mL at a time) and beat until silky. For the silhouette, keep chocolate/candy melt working time short; if it thickens, gently re-melt only until fluid, then continue.
