Description

Fudgy chocolate brownies loaded with chocolate sandwich-cookie chunks, orange jimmies, and a thin white-chocolate drizzle.

Ingredients

Scale
  • 1/2 cup (113 g) unsalted butter
  • 6 oz (170 g) semisweet chocolate, chopped
  • 3/4 cup (150 g) granulated sugar
  • 1/4 cup (50 g) packed light brown sugar
  • 2 large eggs (about 100 g without shells)
  • 1 tsp (5 ml) vanilla extract
  • 1/2 cup (60 g) all-purpose flour
  • 1/3 cup (28 g) Dutch-process cocoa powder
  • 1/2 tsp (3 g) fine salt
  • 12 regular chocolate sandwich cookies (about 135 g), roughly chopped
  • 2 tbsp (24 g) orange jimmies, divided
  • 2 oz (57 g) white chocolate, chopped

Instructions

  1. Heat the oven to 350°F (175°C). Line an 8-inch (20 cm) square metal pan with parchment, leaving an overhang, and lightly grease it.
  2. Melt the butter and semisweet chocolate together in short microwave bursts, stirring often. Let cool for 3 minutes.
  3. Whisk in both sugars. Add the eggs one at a time, then whisk in the vanilla until the batter looks glossy.
  4. Sift in the flour, cocoa, and salt. Fold just until a few flour streaks remain, then fold in two-thirds of the chopped cookies.
  5. Spread the batter level in the pan. Press the remaining cookie pieces into the top and scatter with 1 1/2 tbsp (18 g) orange jimmies.
  6. Bake for 24–28 minutes, until the edges are set and a tester in the center comes out with thick moist crumbs but no liquid batter.
  7. Cool completely in the pan, then lift out and cut into 16 squares.
  8. Melt the white chocolate, drizzle it thinly over the squares, and immediately add the remaining 1/2 tbsp (6 g) orange jimmies. Let set before serving.

Notes

For clean slices, chill the cooled slab for 20 minutes and wipe the knife between cuts. Check candy and cookie labels when serving guests with allergies.
