Midnight blackberry chocolate cauldron cups combine crisp dark-chocolate shells with a silky purple blackberry filling. Their small round shape and curved chocolate handles suggest tiny cauldrons without sacrificing a refined dessert-table look.

The shells are made in silicone muffin cups, so no specialty chocolate molds are required. A blackberry-white-chocolate ganache supplies natural fruit color and a creamy contrast to the dark shell.

Why these chocolate cups work

Two thin layers of tempered-style chocolate create a shell sturdy enough to release but pleasant to bite. Reducing the blackberry puree concentrates flavor and limits the water introduced into the ganache.

Ingredient notes

Use good semisweet or dark chocolate for the shells. Strain the blackberry puree for a smooth filling. White chocolate helps the berry color remain visible and balances its acidity.

Shape the cauldrons

Brush chocolate up the sides of each silicone cup twice, chilling briefly between layers. Pipe small curved handles on parchment and attach them with dots of melted chocolate after the filled cups set.

Success tips

  • Keep all tools dry when working with chocolate.
  • Reduce and cool the blackberry puree before making ganache.
  • Build two even shell layers, especially around the rim.
  • Release the silicone slowly to protect the sides.

Substitutions and variations

Raspberry puree works in place of blackberry. For an easier finish, omit the handles and call them midnight chocolate cups. A tiny pinch of black cocoa crumbs can replace the sugar pearls.

Storage and make-ahead

Refrigerate the finished cups airtight for up to four days. Let them stand at cool room temperature for 10 minutes before serving. Freeze only the empty shells, not the filled cups.

Frequently asked questions

Why did my shell crack?

The rim was probably too thin or the cup was released too quickly. Add a second even coat and peel the silicone away gradually.

Can I use candy melts?

Yes for the shell, although real chocolate gives a cleaner flavor and less waxy texture.

Description

Dark chocolate cups filled with blackberry-white-chocolate ganache and finished as tiny cauldrons.

Ingredients

Scale
  • 14 oz (397 g) semisweet chocolate, finely chopped and divided
  • 1 1/2 cups (216 g) fresh or frozen blackberries
  • 2 tbsp (25 g) granulated sugar
  • 1 tsp (5 ml) lemon juice
  • 5 oz (142 g) white chocolate, finely chopped
  • 1/3 cup (80 ml) heavy cream
  • 1 tbsp (14 g) unsalted butter
  • 1 tbsp (8 g) freeze-dried blackberry powder
  • 12 fresh blackberries (about 72 g), for garnish

Instructions

  1. Melt 10 oz (284 g) semisweet chocolate gently. Brush a thin layer inside 12 standard silicone muffin cups and chill for 8 minutes.
  2. Brush on a second even layer, strengthening the rims. Chill for 15 minutes, then peel away the silicone carefully.
  3. Cook the blackberries, sugar, and lemon juice for 6–8 minutes. Mash, strain, and return the puree to the pan until reduced to 1/3 cup (80 ml). Cool to lukewarm.
  4. Heat the cream until steaming. Pour it over the white chocolate, rest for 2 minutes, then stir smooth with the butter and reduced puree. Cool until thick but pipeable.
  5. Melt the remaining 4 oz (113 g) semisweet chocolate. Pipe 12 small curved handles on parchment and let them set.
  6. Pipe blackberry ganache into the chocolate cups. Attach one handle to each cup with melted chocolate.
  7. Dust lightly with blackberry powder, top with fresh blackberries, and chill for 30 minutes before serving.

Notes

If the ganache feels warm, wait before filling so the chocolate shells do not soften.
