No-bake apple cider tiramisu cups with cinnamon apples

No-bake apple cider tiramisu cups replace the usual coffee soak with concentrated cider and layer it with mascarpone cream and cinnamon apples. The dessert keeps the soft, spoonable structure of tiramisu while offering a clear orchard flavor suited to early autumn.

Individual glasses make the layers visible and remove the uncertainty of slicing a very soft dessert. They also chill more quickly than a large pan and can be assembled a full day before serving.

How to concentrate apple cider flavor

Regular cider contains enough water to make ladyfingers soggy before its flavor becomes obvious. Simmering the cider until reduced by half creates a stronger soak with natural sweetness and acidity.

Cool the reduction completely before dipping. Warm cider can soften the cookies immediately and loosen the mascarpone cream.

Choosing apples for distinct layers

Firm varieties such as Honeycrisp, Pink Lady, or Granny Smith hold their shape during a short stovetop cook. Cut the apples into small even cubes so each spoonful carries fruit without making the layers difficult to assemble.

Cook until the cubes are tender but not collapsing, and continue until excess juice has evaporated. A dry, glossy compote protects the cream.

Light mascarpone cream

The filling combines mascarpone with whipped cream rather than raw eggs. This keeps the method approachable and gives the cups a stable but airy texture.

Bring mascarpone only slightly toward room temperature so it blends smoothly, while keeping the heavy cream cold. Fold the two mixtures gently to preserve volume.

Dip rather than soak

Ladyfingers absorb liquid quickly. Dip each piece for about one second per side and transfer it immediately to the glass. The cookies will continue softening during the required chill.

Break the ladyfingers cleanly to fit each glass. Small gaps are acceptable because the cream and apples settle into them.

Layering clean individual cups

Pipe the mascarpone cream for neat sides, then add a level spoonful of apples. Repeat with a second layer of dipped ladyfingers and cream. Reserve a little apple mixture for the top so the flavor is visually clear.

Wipe the rim after assembly and cover each glass before refrigerating. Add the final cinnamon dusting shortly before serving.

Troubleshooting

Why are the ladyfingers mushy?

They were dipped too long or the cider was warm. Use cold reduction and a very quick dip.

Why is the cream loose?

The heavy cream may be underwhipped or the ingredients too warm. Chill the bowl briefly and fold carefully.

Why is there liquid in the bottom?

The apple mixture was not reduced enough. Cook until the pan looks nearly dry and cool it before layering.

Variations

Add a small spoonful of caramel between the layers for extra richness, or replace half the apples with firm pears. Ginger adds a sharper spice note, while maple syrup can replace part of the sugar in the apples.

Make-ahead and storage

Reduce the cider and cook the apples up to three days ahead. Assemble the cups 8 to 24 hours before serving for the best texture. They keep refrigerated for three days, although the layers become progressively softer.

Frequently asked questions

Does this contain coffee or alcohol?

No. The soak is made with apple cider, making the dessert approachable for guests who avoid coffee or alcohol.

Can I make one large tiramisu?

Yes. Assemble the same components in an 8-inch square dish and chill overnight before serving with a spoon.

Description

Individual no-bake tiramisu cups with reduced apple cider, mascarpone cream, ladyfingers, and cinnamon apples.

Ingredients

Scale
  • 2 cups (480 ml) apple cider
  • 3 medium firm apples (about 510 g), peeled and diced
  • 2 tbsp (28 g) unsalted butter
  • 1/3 cup (67 g) packed light brown sugar
  • 1 tsp (3 g) ground cinnamon
  • 1 tbsp (15 ml) lemon juice
  • 12 oz (340 g) mascarpone
  • 1 1/2 cups (360 ml) cold heavy cream
  • 3/4 cup (90 g) powdered sugar
  • 1 tsp (5 ml) vanilla extract
  • 24 crisp ladyfingers (about 200 g)
  • 1/4 tsp (0.7 g) ground cinnamon, for finishing

Instructions

  1. Simmer the apple cider until reduced to 1 cup (240 ml), about 15–20 minutes. Pour into a shallow bowl and cool completely.
  2. Cook the diced apples with butter, brown sugar, 1 tsp (3 g) cinnamon, and lemon juice for 8–10 minutes, until tender and nearly dry. Cool completely.
  3. Beat the mascarpone, powdered sugar, and vanilla just until smooth.
  4. Whip the cold heavy cream to firm peaks, then fold it into the mascarpone in three additions.
  5. Dip each ladyfinger briefly in the cold cider reduction and break as needed to fit eight clear glasses.
  6. Layer dipped ladyfingers, piped mascarpone cream, and cinnamon apples in each glass. Repeat once, finishing with cream and a small spoonful of apples.
  7. Cover and refrigerate for at least 8 hours.
  8. Dust lightly with the remaining cinnamon immediately before serving.

Notes

Use cold cider reduction and dip the ladyfingers very briefly; they continue softening as the cups chill.
