Description

Dark chocolate truffles filled with a thick, spoonable green apple caramel center and finished with a glossy green drizzle—no molds required.

Ingredients

  • Green apple purée (unsweetened), 1 cup (240 ml), or apple purée made from peeled green apples
  • Apple butter, 1/2 cup (about 150 g) (optional shortcut—see instructions for simmering/thickening)
  • Light brown sugar, 2 tbsp (25 g)
  • Unsalted butter, 1 tbsp (14 g)
  • Fine salt, 1/8 tsp
  • Dark chocolate, finely chopped, 12 oz (340 g)
  • Heavy cream, 1/2 cup (120 ml)
  • Unsalted butter, 1 tbsp (14 g) (for ganache)
  • Neutral oil (for drizzle thinning), 1 tsp (5 ml), plus more as needed
  • White chocolate, finely chopped, 3 oz (85 g) (for glossy green drizzle)
  • Gel food coloring (green), 1/4 tsp to 1/2 tsp (start small)
  • Flaky sea salt (optional), for finishing

Instructions

  1. Make the green apple caramel center (must be thick): In a small saucepan over medium heat, combine green apple purée (or apple butter + a splash of water only if needed), brown sugar, butter, and fine salt. Bring to a gentle simmer and cook, stirring often, until the mixture becomes very thick and spreadable—like thick jam—with a spoon trail that holds for a second. This usually takes 15–25 minutes (apple purée may take longer). If using apple butter, simmer 2–6 minutes longer until noticeably thicker. Scrape into a bowl and cool to room temperature, then chill until firm, about 1–2 hours.
  2. Prep the dark chocolate ganache: Place chopped dark chocolate in a heatproof bowl. Heat heavy cream until steaming (not boiling). Pour over chocolate and let sit 1 minute, then stir until smooth. Stir in 1 tbsp butter until glossy. Cover and refrigerate until firm enough to scoop and roll, about 1–2 hours.
  3. Portion the fillings: Once firm, scoop small mounds of green apple caramel (about 1 tsp each, or however many will make your truffles). Roll quickly between clean hands to smooth, then set on a plate. If the caramel softens, chill again for 10 minutes.
  4. Assemble truffles (seal completely): Scoop small portions of chilled ganache (about 1 tbsp each) and flatten into disks. Place a caramel mound in the center and fold the ganache around it. Roll gently to form a ball. Make sure there are no visible seams.
  5. Chill before dipping: Place assembled truffles on a parchment-lined tray and refrigerate 20–30 minutes, until the shells feel firm.
  6. Dip (or drizzle without full dunking if you prefer): If fully dipping, melt a small extra amount of dark chocolate (optional) and dip each truffle, letting excess fall back. If you prefer easier finishing, you can simply lay truffles on parchment and drizzle as a “finish” step—no dunking required—though dunking gives a more even shell.
  7. Make the glossy green drizzle: Melt white chocolate in short microwave bursts (or a double boiler) until smooth. Stir in gel green food coloring gradually, then thin with neutral oil until the drizzle flows smoothly but still clings (aim for a thick ribbon).
  8. Finish: Drizzle a thin line over each truffle. If any drizzle pools, wipe the back of your spoon and drizzle again. For extra “poison apple” shine, add a few pinches of flaky sea salt right after drizzling (optional).
  9. Set: Chill truffles until drizzle is set, about 10–20 minutes. Serve cold or slightly softened at cool room temperature.

Notes

Key moisture-control goal: the green apple caramel must be thick and spreadable before chilling. If it looks pourable when warm, keep reducing—runny centers are the main cause of leakage. During dipping, if truffle shells soften, re-chill the tray for 10–15 minutes and continue.
