Dark chocolate vampire cups with ruby pomegranate centers

Pomegranate vampire chocolate cups hide a glossy ruby fruit center inside a crisp dark chocolate shell. Two small white-chocolate triangles create a restrained fang detail, making the cups suitable for both a polished dessert table and a playful Halloween party.

The pomegranate filling is cooked until thick, then chilled before assembly. Its tart flavor balances the dark chocolate and keeps each small cup from tasting overly sweet.

Why these chocolate cups work

Two thin layers of chocolate create a shell sturdy enough to release from silicone liners. Cornstarch stabilizes the fruit center, while lemon sharpens the pomegranate flavor and preserves the ruby color.

Ingredient notes

Use pure pomegranate juice without added sugar. Finely chopped chocolate melts more evenly than large pieces. Refined coconut oil softens the shell just enough for a clean bite.

Build a leak-free center

Coat the base and sides of each liner twice, chilling between layers. Spoon the cold filling below the rim and seal it completely with the final chocolate layer.

Success tips

  • Cook the fruit filling until it leaves a clear trail in the pan.
  • Cool the filling completely before assembly.
  • Keep all bowls and utensils dry when melting chocolate.
  • Chill the cups before peeling away the liners.

Substitutions and variations

Tart cherry juice can replace pomegranate juice. Milk chocolate produces a sweeter shell, while freeze-dried raspberry powder may be sprinkled inside for extra color.

Storage and make-ahead

Keep the cups refrigerated in a covered container for up to five days. Separate layers with parchment and let them stand for five minutes before serving.

Frequently asked questions

Why is the center runny?

It needs a full boil to activate the cornstarch. Cook while whisking until the mixture becomes glossy and noticeably thick.

Can I use paper liners?

Mini silicone liners release most cleanly, but sturdy foil liners also work when peeled away carefully.

Description

Dark chocolate cups filled with thick pomegranate jelly and decorated with tiny white-chocolate fangs.

Ingredients

Scale
  • 1 cup (240 ml) pure pomegranate juice
  • 1/4 cup (50 g) granulated sugar
  • 1 1/2 tbsp (12 g) cornstarch
  • 1 tsp (5 ml) lemon juice
  • 12 oz (340 g) dark chocolate, finely chopped
  • 1 tbsp (14 g) refined coconut oil
  • 2 oz (57 g) white chocolate, melted

Instructions

  1. Whisk the pomegranate juice, sugar, cornstarch, and lemon juice in a small saucepan until smooth.
  2. Cook over medium heat, whisking constantly, until the filling boils and becomes thick and glossy, about 4–6 minutes. Transfer to a bowl, cover the surface, and chill completely.
  3. Arrange 12 mini silicone liners on a tray. Melt the dark chocolate with the coconut oil in short microwave bursts, stirring frequently.
  4. Spoon a thin layer of chocolate into each liner and brush it up the sides. Chill for 10 minutes, then repeat with a second thin coat.
  5. Add 2 tsp (10 ml) cold pomegranate filling to each shell, keeping it below the rim.
  6. Cover every cup completely with the remaining dark chocolate. Chill for 20 minutes, then peel away the liners.
  7. Pipe 24 tiny white-chocolate triangles on parchment. Let set, then attach two fangs to each cup with a dot of melted chocolate.

Notes

The pomegranate filling must be completely cold before it touches the chocolate shells.
