Description
Tender pumpkin-spice cupcakes with a small mound of brown-sugar cream-cheese frosting, decorated as an edible pumpkin patch using orange frosting mini pumpkins, a tiny green vine, and fine chocolate-cookie crumb soil.
Ingredients
- All-purpose flour: 1 3/4 cups (219 g)
- Pumpkin pie spice: 2 1/2 teaspoons (5 g)
- Baking powder: 2 teaspoons (8 g)
- Baking soda: 1/2 teaspoon (3 g)
- Fine salt: 1/2 teaspoon (2.5 g)
- Unsalted butter, melted and cooled slightly (or neutral oil): 1/2 cup (113 g)
- Light brown sugar (packed): 3/4 cup (165 g)
- Granulated sugar: 1/4 cup (50 g)
- Large eggs: 2 (about 100 g total without shells)
- Vanilla extract: 2 teaspoons (10 ml)
- Plain pumpkin purée: 3/4 cup (180 g)
- Buttermilk (or whole milk): 1/4 cup (60 ml)
- For the frosting: 8 oz cream cheese, softened (226 g)
- Light brown sugar (packed): 1/2 cup (110 g)
- Unsalted butter, softened: 4 tablespoons (57 g)
- Powdered sugar: 2 1/2 cups (300 g)
- Vanilla extract: 1 teaspoon (5 ml)
- Fine salt: pinch (about 1/8 teaspoon, 0.6 g)
- Whole milk for dissolving brown sugar: 2 tablespoons (30 ml)
- Gel food coloring: orange (for tinting) and green (for vine)
- Edible “soil”: chocolate cookies (such as chocolate sandwich cookies), finely crushed: 1/4 cup (20–25 g)
- Optional decoration detail: cocoa powder, lightly dusted: 1–2 teaspoons (1–2 g)
Instructions
- Heat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- Whisk the flour, pumpkin pie spice, baking powder, baking soda, and salt in a medium bowl.
- In a large bowl, whisk the melted butter (or oil), brown sugar, and granulated sugar until smooth. Whisk in eggs one at a time, then whisk in vanilla, pumpkin purée, and buttermilk.
- Add the dry ingredients to the wet ingredients. Mix just until no dry streaks remain. The batter should be thick and pourable—like thick cake batter, not thin pancake batter.
- Divide batter evenly among the 12 liners (about 1/4 cup / 60 g batter each). Bake 18–20 minutes, until the tops spring back when touched and a toothpick in the center shows a few moist crumbs.
- Cool cupcakes in the pan for 5 minutes, then move to a rack to cool completely (frosting won’t set properly on warm cupcakes).
- Make a smooth brown-sugar base: warm the brown sugar with 2 tbsp (30 ml) milk in a small saucepan over medium-low heat, stirring for 2–3 minutes until the grains dissolve. Cool completely to room temperature. Beat the cream cheese and softened butter until smooth, then beat in the cooled brown-sugar mixture.
- Beat in powdered sugar, vanilla, and salt until thick and pipeable. If soft, chill 10–15 minutes; if stiff, beat briefly to loosen rather than adding more liquid. Tint part of the frosting orange and keep the rest brown-sugar colored for the mound base. Tint a small portion green for the vine. Chill frosting 10–15 minutes if it feels soft.
- Assemble: fit a piping bag with a star or round tip for the frosting mound. Pipe a small mound in the center of each cooled cupcake.
- Decorate “mini pumpkins”: spoon orange-tinted frosting into a small piping bag (or use a small zip bag). Pipe 3–4 mini pumpkin shapes per cupcake by making small ridged rosettes on top of the mound.
- Add the green vine: pipe a tiny curving line with green frosting, then dot a few small “leaf” dots along the vine.
- Finish with soil: sprinkle fine chocolate-cookie crumbs over the base edges where the frosting meets the liner. Press gently so crumbs cling.
- Serve right away, or refrigerate up to 3 days in an airtight container.
Notes
Doneness cues matter for texture: bake until the tops spring back and toothpicks show moist crumbs (not wet batter). For stable piping, chill frosting briefly until it holds ridges, and decorate only once cupcakes are fully cool.
