Description
Tender, scoopable pumpkin oatmeal cookies with warm spices, visible rolled oats, and a thin espresso glaze drizzle that sets.
Ingredients
Scale
- 1/2 cup unsalted butter, softened (113 g)
- 1/2 cup packed light brown sugar (110 g)
- 1/4 cup granulated sugar (50 g)
- 1 large egg (about 50 g without shell)
- 1 tsp vanilla extract (5 ml)
- 1/2 cup canned pumpkin purée, blotted to remove excess moisture (120 g)
- 1 1/2 cups rolled oats (135 g)
- 3/4 cup all-purpose flour (90 g)
- 1 tsp baking soda (5 g)
- 1/2 tsp fine salt (3 g)
- 1 1/2 tsp ground cinnamon (4 g)
- 1/2 tsp ground ginger (1 g)
- 1/4 tsp ground nutmeg (0.5 g)
- 1 cup powdered sugar for the glaze (120 g)
- 1 to 2 tsp instant espresso powder (2 to 4 g)
- 1 to 2 tbsp milk, as needed (15 to 30 ml)
- 1/2 tsp vanilla extract for the glaze (2.5 ml)
Instructions
- Preheat and prep: Heat oven to 350°F (175°C). Line 1 to 2 baking sheets with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and nutmeg.
- Cream butter and sugars: In a large bowl, beat the softened butter, brown sugar, and granulated sugar until smooth (about 1 minute). Beat in the egg and vanilla until combined.
- Add pumpkin: Spread the pumpkin purée on a few paper towels and blot firmly to remove excess moisture, then mix it into the bowl until the batter looks evenly orange-brown.
- Build the dough: Stir in the rolled oats. Add the dry ingredients and mix just until no dry flour remains. The dough should be thick and scoopable, with visible oat pieces.
- Rest briefly: Let the dough rest 10–15 minutes. (This helps the oats hydrate so cookies bake up tender rather than gummy.)
- Scoop: Scoop 2 tbsp portions (about the size of a small cookie scoop) and place them on the baking sheet, spaced 2 inches (5 cm) apart.
- Bake: Bake 10–12 minutes, rotating the pan halfway through if your oven runs uneven. Doneness cue: edges look set and slightly darker; centers look soft and slightly underdone.
- Cool on the pan: Cool on the baking sheet for 5 minutes, then transfer to a rack to cool slightly before glazing.
- Make espresso glaze: In a small bowl, whisk powdered sugar with 1 tsp (2 g) espresso powder. Whisk in milk 1 tsp (5 ml) at a time, using only enough for a thick drizzle, then stir in 1/2 tsp (2.5 ml) vanilla. Taste and add the second teaspoon (2 g) espresso powder only if you want a stronger coffee flavor.
- Glaze and set: Drizzle glaze over warm cookies using a spoon. Let stand until the glaze is set, about 20–30 minutes.
Notes
For consistent texture, use canned plain pumpkin purée (not pumpkin pie filling) and measure oats by volume as listed. If your glaze seems too thick, add milk 1 tsp (5 ml) at a time; if too thin, add powdered sugar 1 tbsp (7–8 g) at a time.
