Description

Buttery pistachio shortbread shaped into easy witch fingers with ridged knuckles, almond slice “nails,” and small dots of thick strawberry jam that bake into spooky tips—no special cutters needed.

Ingredients

  • Unsalted butter, cold: 1/2 cup (113 g), cut into chunks
  • Granulated sugar: 1/3 cup (60 g)
  • Ground pistachios (not salted), very fine: 3/4 cup (85 g)
  • All-purpose flour: 1 1/4 cups (165 g)
  • Cornstarch: 2 Tbsp (12 g)
  • Fine salt: 1/4 tsp (1.5 g)
  • Vanilla extract: 1/2 tsp (2.5 ml)
  • Almond extract (optional): 1/4 tsp (1.25 ml)
  • Almond slices (or very thin almond strips): 24 pieces
  • Thick strawberry jam (seedless preferred): 2 tbsp (30 ml / about 40 g)

Instructions

  1. Make the pistachio shortbread dough. In a mixing bowl, combine cold butter and granulated sugar. Mix until you get a thick, sandy paste (about 2–3 minutes). Mix in ground pistachios, flour, cornstarch, salt, vanilla, and almond extract (if using). Press the mixture together—when it’s ready, it should form a cohesive dough.
  2. Chill hard for structure. Pat dough into a flat disk about 1 in (2.5 cm) thick, wrap, and refrigerate at least 60 minutes (or overnight).
  3. Shape fingers without a cutter. Preheat the oven later. Work with half the dough at a time (keep the rest chilled). Roll dough into ropes about 1/2 in (12 mm) thick. Cut into 24 portions. Roll each portion into a finger shape about 3.5–4 in (9–10 cm) long and slightly taper one end.
  4. Create knuckle ridges. Using the dull side of a butter knife or a skewer, lightly score 2–3 shallow “indentation bands” near the middle. Don’t cut all the way through—just score the surface so ridges stay visible after baking.
  5. Assemble nails and jam tips. Place fingers on parchment-lined half-sheet baking pan (18 x 13 in / 46 x 33 cm) with space between. Press one almond slice onto one end of each finger (the nail bed). Add a small dot of thick strawberry jam under/at the almond slice end or at the tapered cut end—about 1/4 tsp (1.25 ml) per cookie.
  6. Chill shaped cookies. Refrigerate 15–20 minutes while the oven heats. This prevents spreading and helps the scored ridges set.
  7. Bake until set but not dark. Bake at 350°F (175°C) for 12–16 minutes, rotating once. Doneness cues: pistachio edges look dry and matte (not glossy), the finger shape holds crisp lines, and the almond slices look lightly toasted.
  8. Cool fully before moving. Cool on the half-sheet pan 10 minutes, then transfer to a rack to cool completely. The jam dot will firm as it cools.

Notes

Use very finely ground pistachios for the best shortbread texture. If your strawberry jam is loose, simmer 1–2 minutes to thicken, then cool before assembling. For best results, bake in batches using the same half-sheet pan: keep remaining shaped cookies chilled until they go in the oven.
