Description
Individual no-bake chocolate cheesecake cups with graham crumbs and marshmallow spiderwebs.
Ingredients
Scale
- 1 1/2 cups (150 g) fine graham cracker crumbs
- 4 tbsp (57 g) unsalted butter, melted
- 1 tbsp (13 g) granulated sugar
- 8 oz (227 g) full-fat block cream cheese, softened
- 3/4 cup (90 g) powdered sugar
- 1 tsp (5 ml) vanilla extract
- 6 oz (170 g) semisweet chocolate, melted and cooled
- 1 cup (240 ml) cold heavy cream
- 3/4 cup (95 g) marshmallow creme
- 1 tbsp (15 ml) heavy cream, for the web
- 2 tbsp (14 g) finely grated dark chocolate
Instructions
- Mix the graham crumbs with melted butter and granulated sugar.
- Beat the cream cheese, powdered sugar, and vanilla until completely smooth. Beat in the cooled melted chocolate.
- Whip 1 cup (240 ml) heavy cream to medium-stiff peaks and fold it into the chocolate cream-cheese mixture in three additions.
- Divide half the graham mixture among eight clear glasses. Add half the chocolate filling, then repeat both layers.
- Level the tops and chill for at least 3 hours.
- Stir the marshmallow creme with 1 tbsp (15 ml) cream until pipeable. Pipe three thin concentric circles on each cup.
- Drag a clean toothpick from the center outward to form webs. Finish with grated dark chocolate and serve chilled.
Notes
Wipe the toothpick after every line so the marshmallow web remains bright and clean.
