Black cocoa skull brownies with pumpkin pie centers

Pumpkin pie stuffed skull brownies combine a nearly black, fudgy brownie shell with a creamy orange pumpkin-spice center. A silicone skull mold gives every portion an instantly recognizable Halloween shape without requiring detailed piping.

The filling is chilled before assembly so it stays in the middle of each brownie. Once baked and cooled, a light cocoa dusting brings out the contours of the skulls while keeping the finish elegant.

Why these skull brownies work

Melted chocolate and black cocoa create a dense dark crumb, while cream cheese and pumpkin form a soft but stable center. Individual cavities also provide chewy edges around every brownie.

Ingredient notes

Use plain pumpkin puree rather than pumpkin pie filling. Full-fat block cream cheese gives the center enough structure. Black cocoa supplies the dramatic color, while regular cocoa contributes most of the chocolate flavor.

Skull molds with brownie batter and chilled pumpkin filling portions

Fill the skull molds cleanly

Add a shallow layer of batter to each greased cavity, place one cold pumpkin portion in the center, and cover it completely. Keep the filling away from the mold edges to prevent leaks.

Success tips

  • Grease the detailed parts of the mold with a pastry brush.
  • Chill the pumpkin filling until firm enough to portion.
  • Set the silicone mold on a metal tray before filling.
  • Cool the brownies completely before unmolding.

Substitutions and variations

Mascarpone can replace cream cheese if it is well chilled. For a milder color, use all regular cocoa. A small pinch of espresso powder may be added to deepen the chocolate.

Storage and make-ahead

Refrigerate the filled brownies airtight for up to four days. Bring them to cool room temperature before serving. Freeze undecorated brownies for up to one month and thaw them overnight in the refrigerator.

Frequently asked questions

Why did the filling leak?

The pumpkin portion may have touched the mold or the batter layer was too thin. Enclose every chilled portion completely.

Can I use a regular muffin pan?

Yes. The flavor remains the same, although the skull detail will be lost. Line and lightly grease 12 muffin cavities.

Description

Individual black-cocoa skull brownies filled with a creamy pumpkin-spice center.

Ingredients

Scale
  • 3 oz (85 g) full-fat block cream cheese, softened
  • 1/4 cup (60 g) plain pumpkin puree
  • 2 tbsp (25 g) packed light brown sugar
  • 1 tbsp (8 g) all-purpose flour, for the filling
  • 1/2 tsp (1 g) pumpkin pie spice
  • 1/2 cup (113 g) unsalted butter
  • 4 oz (113 g) semisweet chocolate, chopped
  • 3/4 cup (150 g) granulated sugar
  • 2 large eggs (100 g without shells)
  • 1 tsp (5 ml) vanilla extract
  • 1/2 cup (63 g) all-purpose flour, for the batter
  • 1/4 cup (22 g) unsweetened cocoa powder
  • 2 tbsp (12 g) black cocoa powder
  • 1/4 tsp (1.5 g) fine salt
  • 1 tbsp (6 g) cocoa powder, for dusting

Instructions

  1. Beat the cream cheese, pumpkin, brown sugar, 1 tbsp (8 g) flour, and pumpkin pie spice until smooth. Divide into 12 small portions on parchment and freeze for 25 minutes.
  2. Heat the oven to 350°F (175°C). Brush a 12-cavity silicone skull mold lightly with oil and place it on a metal tray.
  3. Melt the butter and semisweet chocolate together. Cool for 5 minutes, then whisk in the sugar, eggs, and vanilla.
  4. Fold in 1/2 cup (63 g) flour, both cocoa powders, and salt just until combined.
  5. Add a shallow layer of batter to each cavity. Place one chilled pumpkin portion in the center and cover it completely with the remaining batter.
  6. Bake for 17–21 minutes, until the tops are set and a tester inserted away from the filling shows moist crumbs.
  7. Cool completely in the mold, then release the brownies carefully. Dust lightly with cocoa before serving.

Notes

Do not overfill the detailed mold cavities; leave a small gap at the top so the shapes release cleanly.
