Description

Tender vanilla cake cookies filled with Halloween jimmies and finished with a thin orange glaze.

Ingredients

Scale
  • 2 1/4 cups (281 g) all-purpose flour
  • 2 tbsp (16 g) cornstarch
  • 1 1/2 tsp (6 g) baking powder
  • 1/2 tsp (3 g) fine salt
  • 3/4 cup (170 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1 large egg (50 g without shell)
  • 1/3 cup (80 g) full-fat sour cream
  • 2 tsp (10 ml) vanilla extract
  • 1/2 cup (80 g) orange, purple, and black jimmies
  • 1 1/2 cups (180 g) powdered sugar
  • 2 tbsp (30 ml) milk
  • 1/2 tsp (2.5 ml) vanilla extract, for the glaze
  • Orange gel food coloring, as needed

Instructions

  1. Whisk the flour, cornstarch, baking powder, and salt.
  2. Beat the butter and sugar until creamy, about 2 minutes. Beat in the egg, sour cream, and 2 tsp (10 ml) vanilla.
  3. Add the dry ingredients and mix just until combined. Fold in the jimmies briefly. Cover and chill for 45 minutes.
  4. Heat the oven to 350°F (175°C). Scoop 18 equal portions onto parchment-lined trays and flatten them very slightly.
  5. Bake for 10–12 minutes, until the edges are set and centers look matte. Cool completely.
  6. Whisk powdered sugar, milk, remaining vanilla, and orange gel into a smooth thin glaze.
  7. Spoon a thin layer over each cookie and add a restrained pinch of sprinkles. Let set before stacking.

Notes

If the glaze is too thick, add milk a few drops at a time; it should settle into a thin smooth layer.
